On the Mat: Apple Pie Smoothie

We live in the most innovative time on this planet. We have vehicles that navigate directions for us. We carry hand held devices that deliver the latest news. We can even clap or verbally request a light in our home turn on or off. (“Alexa, turn my light off.”)

So, with all this innovation, when I crave apple pie, I should be able to satisfy my craving while fueling my system with vital nutrients.

We should all be able to indulge, without holding back on flavor.

And thanks to the Apple Pie Smoothie, we can.

This smoothie is dessert in a glass. It will make grandma raise a rival eyebrow. It’s packed with protein from the spinach and the banana enhances the potassium from the spinach while adding a creamy texture. The young coconut flesh is high in the good kind of fat and keeps you feeling full longer between meals.

This is the kind of treat I go to when I’m wanting to untangle myself from the death grip of refined sugars.

And in this house, it’s kid approved.

Apple Pie Smoothie

(Serves 2)

2 green apples

2 cups spinach

1 cup young coconut flesh

1 banana

1 cup coconut water

cinnamon and/or nutmeg to taste

Add first 3 ingredients in a blender. Blend until smooth. Add the coconut water as necessary. Add banana and continue to blend until desired consistency. Sprinkle with spices.
